🍜 Tonkotsu Ramen: Tonkotsu ramen is a Japanese ramen made with a rich, creamy pork-bone broth, springy noodles, chashu pork, soft-boiled egg, green onions, and other toppings.
Ingredients
Broth:

3–4 lb pork bones

1 onion, halved

1 head garlic

1 piece ginger

2–3 tbsp soy sauce

1 tbsp miso

Salt, to taste

8–10 cups water
For the ramen:

Fresh ramen noodles

Chashu pork

Soft-boiled eggs

Green onions

Nori

Corn or bamboo shoots, optional

Instructions:

Blanch the pork bones: Cover bones with water, boil for 10 minutes, then drain and rinse thoroughly.

Make the broth: Add cleaned bones to a large pot with fresh water, onion, garlic, and ginger. Simmer vigorously for several hours, adding water as needed.

Strain: Remove the bones and aromatics. The broth should be creamy and opaque.

Season: Add soy sauce, miso, and salt to taste.

Cook noodles: Prepare ramen noodles according to the package directions.

Assemble: Put noodles in a bowl, pour over the hot tonkotsu broth, and add chashu, egg, green onions, nori, and your favorite toppings.

Shortcut: For a much faster homemade version, use high-quality store-bought pork broth and enrich it with miso, garlic, sesame paste, and a little milk or unsweetened soy milk for a creamy texture.
