How to cook Ravioli:
Ravioli is an Italian dish that has been in my family for more than 100 years.
Here is the recipe:
Ravioli filling:
* 1 pound of fresh ricotta
*1 pinch of grated nutmeg
*1 Teaspoon freshly grated lemon zest 1/2 lemon.
*1 Cup freshly grated parmigiano reggiano
* 1 Large egg , plus 1 large egg lightly beaten with 2 tbs of water.
*Salt
Ravioli Dough:
* 3 2/3 cups of all purpose flour
* 2 Large eggs
* 2 Eggs yolks
* 1 Tbs olive oil
