- Ears of corn
- Japanese short-grain rice
- Salt
- Sake
- Soy sauce
- Butter (I use unsalted; if you use salted butter, adjust the amount of salt)
- Freshly ground black pepper
Tips and Variations
- Always cook the cob. It’s the single biggest flavor boost — don’t skip it.
- Use the freshest corn you can. Corn’s sugar fades fast after picking, so buy it in season and cook it soon.
- Add a knob of butter. Stir in a little butter at the end for a richer, corn-butter style version.
- Make onigiri. Corn rice holds together beautifully as rice balls — great for bento and lunchboxes.
