Miso Ramen Recipe:


     Miso ramen is a savory Japanese noodle soup
 with a rich miso-based broth, customizable toppings, 
and tender noodles, ready in 20–30 minutes.

Ingredients for Miso Ramen

  • fresh ramen noodles
  • dark roasted sesame oil
  • garlic cloves, fresh ginger, and shallot
  • ground pork – or chopped mushrooms and meat alternatives for vegan/vegetarian
  •  Doubanjiang spicy chili bean paste) 
  • miso (Japanese fermented soybean paste) – use any miso except Hatcho or Saikyo
  • toasted white sesame seeds
  • chicken broth – or vegetable stock for vegan/vegetarian
  • sake
  • sugar, kosher salt, and white pepper powder
  • toppings – Chashu, ramen egg, corn kernels, nori (dried laver seaweed), blanched bean sprouts, chopped green onions/scallions, and Shiraga Negi (julienned long green onions).
  • condiments – La-yu (Japanese chili oil) for spice, pickled red ginger (beni shoga), and white pepper powder.



  1. Ingredients

    Soup Broth:

    • 4–6 cups chicken stock or vegetable stock for vegan/vegetarian
    • 3 tablespoons miso paste (white, red, or awase miso)
    • 1–2 tablespoons soy sauce
    • 1–2 tablespoons mirin
    • 1 tablespoon sesame oil
    • 2 cloves garlic, minced
    • 1 teaspoon grated ginger
    • Optional: 1 tablespoon sake or dry sherry, 1 tablespoon sugar
      Noodles:
    • 2 servings fresh or dried ramen noodles (or gluten-free alternatives)
      Toppings (optional but recommended):
    • Soft-boiled eggs (ramen eggs)
    • Chashu pork or tofu for vegetarian/vegan
    • Blanched or sautéed vegetables: bok choy, spinach, bean sprouts, corn, carrots
    • Nori (seaweed), green onions, sesame seeds
    • Optional: chili oil, la-yu, or sriracha for spice

    Instructions

    1. Prepare the Miso Broth:

    • Heat sesame oil in a pot over medium heat. Sauté garlic, ginger, and shallots until fragrant.
    • Add protein (ground pork, tofu, or mushrooms) and cook until done.
    • Stir in miso paste, soy sauce, mirin, and optional sugar or sake.
    • Pour in stock and bring to a simmer. Taste and adjust seasoning with salt and white pepper.

    • 2. Cook the Noodles:
    • Boil a large pot of water. Cook noodles according to package
    •  instructions until al dente.
    • Drain and rinse briefly if using dried noodles to prevent 
    • overcooking.
      3. Prepare Toppings:
    • Soft-boil eggs: simmer for 6–8 minutes, then cool in
    •  ice water and peel.
    • Blanch or sauté vegetables until tender but crisp.
    • Slice chashu or tofu as desired.
      4. Assemble the Ramen:
    • Divide noodles into bowls.
    • Ladle hot miso broth over noodles.
    • Arrange toppings: eggs, vegetables, protein, 
    • nori, and green onions.
    • Drizzle with chili oil or sprinkle sesame seeds if desired.

    Tips and Variations

    • Spicy Miso Ramen: Add doubanjiang (spicy bean paste) 
    • or chili garlic sauce to the broth.
    • Vegetarian/Vegan: Use vegetable stock, tofu, mushrooms, 
    • and skip eggs or meat.
    • Miso Butter Ramen: 
    • Add a small pat of butter on top for a richer flavor.
    • Noodle Choice: Fresh noodles are preferred for chewiness; 
    • dried or instant noodles work in a pinch.
    • Storage: Keep broth separate from noodles if storing; 
    • refrigerate up to 3–4 days. 
    • Reheat gently to avoid overcooking noodles.
